Chicken Provençal Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tbsp Herbes de Provence
  • 1½ tsp kosher salt
  • Freshly ground black pepper
  • 1 to 2 tbsp olive oil
  • 6 medium shallots, quartered
  • 12 cloves garlic, halved
  • 1 cup dry white wine
  • 2 cups cherry tomatoes
  • ½ cup Castelvetrano olives, halved
  • 2 tbsp capers, rinsed
  • 4 sprigs fresh tarragon
  • 1 strip orange zest

For garnish:

  • Fresh parsley, chopped
  • Fresh tarragon, chopped

Instructions

1. Season the Chicken

Pat the chicken dry. Combine Herbes de Provence, salt, and pepper. Rub over both sides of the chicken and under the skin. Let rest for 20 minutes.

2. Sear the Chicken

Preheat oven to 350°F (175°C).

Heat olive oil in a large oven-safe skillet. Sear chicken skin-side down until golden and crisp, about 8 to 10 minutes. Flip and cook another 3 minutes. Remove and set aside.

3. Build the Sauce

Add shallots and garlic to the skillet and cook until fragrant.

Pour in the white wine and scrape up any browned bits from the bottom of the pan. Simmer until reduced by half.

Add tomatoes, olives, capers, tarragon, and orange zest.

4. Braise

Return chicken to the skillet, keeping the skin above the liquid as much as possible.

Transfer to the oven and cook uncovered for approximately 45 minutes, until the chicken is tender and the sauce has reduced.

5. Serve

Discard the tarragon sprigs and orange zest.

Sprinkle with fresh parsley and tarragon. Serve with a warm baguette to soak up the delicious Provençal sauce. Enjoy!
